Ingredients Required

  • 250 grams of fresh paneer, cut into cubes
  • 2 tablespoons of vegetable oil or ghee (clarified butter)
  • 2-3 finely chopped green chillies
  • 1 tablespoon of fine ginger-garlic paste
  • 1 teaspoon of turmeric powder
  • 1 teaspoon of cumin seeds
  • 1 teaspoon of coriander powder
  • 1 teaspoon of red chilli powder
  • A handful of methi leaves
  • 1 teaspoon of garam masala
  • ¼ cup of cashews nuts soaked in warm water for 10-15 minutes
  • ¼ cup of raisins
  • ½ cup of Dahi
  • ¼ cup of jaggery powder
  • Salt

Step 1: We will initiate by preparing the base of our curry, cashew paste. Transfer the soaked cashew to a blender and blend until you get a thick and smooth paste.

Step 2: Place a kadhai or deep pan over medium flame & add 2 tablespoons of ghee or vegetable oil.

Step 3: Once the ghee is heated, add finely chopped green chillies & onions to the pan. Sauté until the onion turn translucent and golden brown.

Step 4: once the onion and chillies are cooked, add one tablespoon of ginger-garlic paste to the pan and sauté[1] for one minute. After a minute, add coriander powder, red chilli powder, turmeric powder, salt and garam masala. Stir them well together and cook for 2-3 minutes and allow the flavour to meld well with onions and chillies. Make sure to stir occasionally to prevent the vegetables and spices from burning.

Step 6: After the spices are cooked, pour the freshly prepared cashew paste into the pan and mix it well together. Cook for 2-3 minutes to cook the raw taste of the cashew.

Step 7: Once the cashew paste has been cooked and spices blended in perfectly, mix in jaggery powder and dahi. Stir them all together gently and make sure the paneer cubes are well coated in the curry.

Step 8: Allow the paneer to cook for 5-7 minutes so it absorbs all the flavours well. It will help the paneer to gain a sweet and savoury flavour. And add crushed methi leaves and mix well.

Step 9: Lastly, taste the methi paneer and adjust the salt and other spices accordingly. Garnish your methi paneer recipe with fresh coriander leaves.

Step 10: Remove the pan from the stove and transfer your hot and delicious methi paneer recipe into a serving dish. You can pair it with tawa roti, naan, or jeera rice.

Note: You can modify the spice level of your methi paneer recipe according to your preference. To enhance the flavour and colour of your dish, you can add saffron-soaked milk.

Why Should You Prefer A2 Milk Paneer?

Paneer, which is a key ingredient in the methi paneer recipe, should be fresh, pure, and unadulterated. That is why we recommend using an A2 paneer over a regular one because it can evaluate the dish’s nutritional value and taste. It is not only fresh, creamy, and soft but also high in nutritional profile. This paneer type is made from the milk produced by desi cows that naturally contains A2 beta-casein protein. This protein type is believed to be easier on our gut health, unlike regular or A1 milk. However, A2 milk paneer is known for its purity and freshness, which provides our dish with a velvety and creamy texture. We recommend you choose a dairy product type made through traditional methods using pure and unadulterated A2 cow milk because it will not only enhance the flavour of our dish but also provide essential nutrients and minerals like calcium and protein.
